It is that time of year when I start experimenting with new recipes again. It is Spring and that means 'new life' - well for me new cake ideas! Today I created a 'HEALTHY' version of my favourite kind of sweet treats. It's full with good nutrients, fats, vitamins & minerals, aaaaand fruit of course! I would not be able to miss out on that ha-ha. So overall I would say it is one of the healthiest/vegan/paleo/vegetarian cake you'll have ever tried. Curious about the recipe? Make sure to read on!

Ingredients:
- 100g fine oats
- 60g spelt flour
- 2tbsps baking powder
- 15g flax seeds
- 30g sunflower seeds
- 100g dried cranberries
- 3 eggs
- 300g (organic) apple sauce
- Some salt and cinnamon for flavouring

- 60g spelt flour
- 2tbsps baking powder
- 15g flax seeds
- 30g sunflower seeds
- 100g dried cranberries
- 3 eggs
- 300g (organic) apple sauce
- Some salt and cinnamon for flavouring

Recipe:
1. Pre-heat the oven on 180 celcius.
2. Add the fine oats, spelt flour and the baking powder together in a big bowl & mix.
3. Add a little bit of salt (if you want...)
4. Mix the eggs in a separate bowl and then add to the four bowl.
5. Keep mixing until the eggs are absorbed by the flour and is evenly distributed.
6. Add the apple sauce & mix. You'll see that the dough become very runny and smooth, that's normal ;)
7. Add the flax & sun flower seeds and the cranberries to the dough and gently mix it with a spoon (NO high speeds mixer).
8. Flavour it a little with cinnamon or vanilla aroma.
9. Put in into a cake batch (+/- 23cm) and top it with a little bit of oats or anything you want!
10. Leave it in the oven for about 30-35min...

I hope that you guys gives this cake a try, even for those out there that aren't the cooking princess ... It's super easy to make and so delicious! There is no escape on not trying this cake!
